I love Mexican food. A lot. Tacos, burritos, enchiladas, fajitas, chimichangas, quesadillas … you name it, I love it! Heck, I even got MARRIED in Mexico! But I think more than any of these delectable dishes, my favourite Mexican delight is guacamole.

Summer is here, which means BBQ’s galore! Most people look forward to burgers, hot dogs, sausages, etc., but not me. I look most forward to yummy salads and sides, since they often utilize ingredients that aren’t necessarily available all throughout the year – or just taste better in the summer. So, I introduce to you my easy-peasy Greek Pasta Salad.
I’d like to start off by saying that I cannot believe that I am actually posting this recipe. Why, you ask? Because it’s pretty much the easiest coleslaw recipe on earth. Actually, it’s so easy that I’m not even sure it could be considered a “recipe”. But I do feel like it’s a public service that I do post this recipe, because it is oh so simple and everyone will ask you how you made it and if you can shoot them over the recipe.
I LOVE Asian cuisine. Sushi … spring rolls … pad thai … lo mein … pho … general tso chicken … you name it, chances are I love it. In fact, I think if I had to choose one cuisine to eat for the rest of my life, it would be Asian. There’s just so much to choose from and it’s all so yummy. I don’t, however, love how many calories most Asian dishes carry, so I was thrilled when I stumbled upon a recipe for a lower calorie, higher protein option. The best part is that it doesn’t TASTE like a healthier option. It is amazing and tastes just like something you would order from a Chinese restaurant.
