Garlic Parmesan Mushrooms & Onions

Do you know what I love most about mushrooms and onions?  I don’t have to share them!  I know that sounds super mean, but it’s one of the few things my husband doesn’t like, which means I get to eat them all to myself.

I love Mexican food.  A lot.  Tacos, burritos, enchiladas, fajitas, chimichangas, quesadillas … you name it, I love it!  Heck, I even got MARRIED in Mexico!  But I think more than any of these delectable dishes, my favourite Mexican delight is guacamole.
